Chinese is the language of PRC, means "pinyin + Simplified symbols"
in HK they speak Cantonese = "jyutping + Traditional symbols"
in Taiwan they use "pinyin + Traditional symbols"
choose what to learn depending on the location you need

Are you referring to Mandarin vs Cantonese? If so Mandarin is more popular, that's how I decided to learn it with respect to both of these.
