If you're not easygoing, we might say that you're: uptight, inflexible, tense
If you can think in various way and not just stereotypically, we might say that you're: open-minded, unbiased

easy going - opposite = highly-strung
outgoing - reserved
generous - mean (or ungenerous)
stubborn - pliable
open-minded - dogmatic
