Does these phrases sound native? 1. I’m picky about coffe. 2. I’m choosy about shoes. 3. I’m not particular about anything. 4. I’m committed about bangs. 5. I’m fussy about using peppers. 6. I’m fastidious about window curtains.

Overseas English would sound a bit different. 1 "I'm picky about *my* coffee", would be more common. 2 "I'm choosy (or choosey) when it comes to shoes", would be more common. 3 I'm having a hard time picturing somebody using this phrase... maybe it would be more natural to say, "I'm not particular about those things". 4 Again, not sure I've ever heard that. Perhaps, "I'm decided about my bangs." or "I'm committed to having (or not having) bangs." 5 "I'm fussy when it comes to using peppers", would be more natural. 6 "I'm fastidious about *my* curtains", you can't really be fastidious about *any* curtains. Sometimes it's hard to explain style in English. It takes a lot of reading and practice.

It's not exactly easy to explain, but they don't sound natural.
