Hey, how are you? I hope you are well. I'm Milo, Spanish tutor at italki, and today we are going to talk about some typical Colombian dishes. These dishes reflect the rich variety of flavors and traditions of our regions. Let's discover them!

Arepa: La arepa es uno de los platos más emblemáticos de Colombia. Hecha a base de maíz, la arepa puede ser acompañada con diferentes ingredientes como queso, carne, huevo o mantequilla. Cada región tiene su versión. Ejemplo: "En Antioquia, la arepa es más gruesa, mientras que en la Costa Caribe es más delgada."

Ajiaco: Este es un caldo típico de Bogotá. Está compuesto por pollo, papas, maíz, guasca (una hierba colombiana) y se sirve con arroz, aguacate y alcaparras. Es un plato reconfortante, ideal para días fríos. Ejemplo: "El ajiaco es un plato tradicional de la capital, Bogotá."

Bandeja Paisa: Es un plato completo y abundante, característico de la región del Valle de Aburrá. Incluye arroz, frijoles, carne molida, chicharrón (panceta frita), arepa, aguacate, huevo frito, y plátano maduro. Ejemplo: "La bandeja paisa es un plato lleno de sabor y energía."

Sancocho: Este plato se sirve en muchas regiones de Colombia y varía dependiendo de los ingredientes. Por lo general, se prepara con carne de res, pollo o pescado, y se acompaña con yuca, plátano, papa y mazorca. Ejemplo: "El sancocho es perfecto para compartir en familia."

Empanadas: Las empanadas colombianas son rellenas de carne, pollo, o incluso queso, y se fríen hasta quedar crujientes. Se sirven con salsa de ají. Ejemplo: "Las empanadas son un excelente aperitivo para cualquier reunión."

La Cuenca de México, lugar donde se fundó la capital del imperio mexica, Tenochtitlan, alojaba un sistema compuesto por cinco subcuencas con lagunas de diversos tamaños y pantanos, las cuales ocupaban una superficie de entre 800 y 1000 km2. En la época prehispánica, a cada lago se le nombró como la población, o señorío, más importante: Zumpango y Xaltocan, al norte, y Texcoco, México, Xochimilco y Chalco al centro sur. La ciudad imperial de México-Tenochtitlan se ubicó en el Lago de México, en un islote compartido con Tlatelolco, urbe aliada. Los lagos de Xochimilco y Chalco tenían agua dulce.

Hacia la época de la conquista, inicios del siglo XVI, la fundación de los mexicas-tenochcas alcanzaba ya una superficie de alrededor de 12 km2, y tenía entre 150 y 200 mil habitantes. Se calcula que en toda la Cuenca de México había cerca de un millón de habitantes. Todos ellos habían aprendido a convivir con la naturaleza circundante, rica en flora y fauna, aprovechando eficientemente los recursos. También habían vinculado sus ciudades a través de calzadas, y controlado las aguas con diques. Además, durante el Posclásico habían dominado poco a poco los pantanos, sobre todo en la zona de aguas dulces, convirtiéndolos en región chinampera, con cerca de nueve mil parcelas en una extensión de 120 km2. La economía de la región combinaba el auto abasto, el comercio y la tributación de materias primas y productos, y el mercadeo se veía favorecido por una dinámica red de canales artificiales.
Casi dos siglos de peregrinación, llevó al pueblo azteca ―proveniente de Aztlán, “lugar de las garzas”, en las costas nayaritas, según últimos hallazgos― a encontrar el lugar con la señal que Huitzilopochtli, uno de sus dioses, les había indicado para reconocer el sitio donde podrían establecerse: un águila posada sobre un nopal. Ahí deberían fundar un templo en su honor y realizar los ritos acordes con su credo, y eso hicieron cuando, tras muchas penurias, contemplaron la señal...

For the past few years, companies around the world have been testing out a four-day work week. In many cases, this means allowing employees to spread their work hours over four days instead of five.

Many of these tests have been successful, and people in the UK may soon get more rights to ask for a four-day work week.

Since April, employees in the UK have had the right to ask for more flexible working conditions, but companies do not have to agree to it.

But under the government's plans to increase flexibility for workers, companies may have to offer flexible working hours from the day the employee starts working — although it's not yet clear what this means.

"One possibility is for the government to make it more difficult for employers to refuse such requests, because at present it is quite easy for them to do so," Charlie Thompson, an employment lawyer who works for law company Stewarts, told Sky News.

Education Minister Jacqui Smith said more flexibility could be better for productivity.

"You're still doing the same amount of work, but perhaps you're doing it in a way that enables you, for example, to need less child care, to spend more time with your family, to do other things, that encourages more people into the workplace," she told LBC Radio.

But not everyone is happy with the idea of a four-day work week, and some tests weren't as successful as others.

UK supermarket Asda tested a four-day week, but changed back to the five-day week after staff said the longer work days were too demanding.

Another supermarket, Morrisons, also tried a four-day work week at its head office, but to make it work, staff sometimes had to work on Saturdays, which they weren't happy about.
