En un estado pintoresco del corazón de México, donde la historia se entrelaza con la pasión por la cocina, nació una de las joyas culinarias más emblemáticas del país: los chiles en nogada. Este exquisito platillo ha cautivado paladares durante siglos y es una verdadera obra maestra de la gastronomía poblana.
Su origen se remonta a los días tumultuosos de la independencia mexicana en el siglo XIX, cuando el país luchaba por su libertad. La historia cuenta que estos chiles rellenos fueron creados por primera vez en 1821, un año trascendental para la nación mexicana.

La leyenda cuenta que las monjas agustinas del Convento de Santa Mónica cocinaron los chiles en nogada en honor al Ejército Trigarante y al líder insurgente Agustín de Iturbide, quien había regresado a Puebla triunfante en ese año. La ocasión coincidió con la festividad de Santa Mónica, lo que hizo que el plato fuera aún más especial. Desde entonces, este platillo ha estado asociado a la celebración de independencia del país.
Otra versión señala que la receta de los chiles bañados en salsa de nuez existía desde 1714. La noche en la que fueron preparados en honor a Iturbide, quien se convirtió en emperador, únicamente surgió la decoración con los colores patrios que se conserva hasta ahora.
Los chiles en nogada consisten en chiles poblanos rellenos de picadillo, una mezcla de carne de res y cerdo, sazonada con pasas, almendras, frutas como pera y manzana, especias y condimentos. Pero lo que les otorga su carácter distintivo es la nogada, una salsa cremosa a base de nuez de Castilla, que aporta un toque de exquisitez a la mezcla de sabores.

Por último, se espolvorean con granos de granada, creando un contraste de sabores y texturas que deleitan los sentidos, y unas ramitas de cilantro. Actualmente existe un debate sobre si los chiles van capeados o no.

Pizza is one of the world's most popular fast foods. It's believed that over 5 billion pizzas are sold around the world every year. In the US alone, people buy about 3 billion pizzas each year, which is about 46 slices per person!

But it wasn't always as popular as it is today — in fact, it used to be looked down on, even by Italians!

The modern pizza we know today started in Naples, Italy, in the 18th century. Poor people in the city needed cheap food that was easy to eat as they looked for work. Street vendors sold them pizzas with simple toppings like garlic and tomatoes.

For a long time, pizza was looked down on as food for the poor, and visitors to Naples thought it was dirty and unappealing.

But this changed in 1889, when Queen Margherita of Italy tried pizza and loved it. The pizza with tomatoes, mozzarella and basil was named after her, and pizza started to become a national dish in Italy.

Pizza became a favorite in the US after Italian immigrants brought it with them. It became especially popular in cities like New York, and new styles like Chicago deep dish and Hawaiian were invented.

And it became even more popular with the invention of frozen pizza, which let people make their own pizzas at home.

Today, pizza is enjoyed around the world, with many different toppings and styles. But its basic form hasn't changed very much from all those years ago.
