Does it sound odd to use “next thing...” in this sentence?
“I already made you a cup of coffee and brought it over to you, now you want me to out sugar in it for you? Next thing you will be wanting me to hand-feed you”

It may not be technically grammatically correct, but it is a commonly used phrase and accepted as correct anyway 😉

It is OK.
I think a more common phrase would be "Next thing I know, you will be wanting me to hand feed you."
You grammar is fine this is just a common way to use that phrase in American English.
