Why do people use ” someone stop me ” instead of ” someone stops me” in oral English? Plz help. Thanks a lot!

Because in this case “stop me” is in the imperative tense.

Yes, it's imperative. We could re-write it. "Someone! Anyone! Yes, you. Stop me." You have the correct verb if you want to describe a situation in the third person. "I live with people who keep me safe. Every time I try to do something unsafe, someone stops me."
