It obviously that black tea might be obtained through two methods. They consist of traditional and modern methods. At the beginning, fresh tea leaves are collected according to needed quality of tea. If we need good quality tea, only bud and 2 top leaves are picked. Afterwards, withering process are being implemented, as the result 60% of moisture are going out. Then, regarding to which method we want to use the process of rolling or cutting occurs. Evidently, after the fast cutting process smaller granular pieces of tea leaves are being created. On the other hand, by rolling the leaves we are disposing of enzymes and get flat and broken leaves. Afterwards, by means of the oxidation process leaves alter their colour to copper in presence of air and enzymes. In the end, the leaves are being dried in hot air dryers and 97% of moisture vaporizing. During this they spread flavour and aroma. On the whole, the process of getting black tea doesn't complex. Even if process has 4 stages mass-production of tea isn't supposed to be easy.

The given diagram shows the various processes for black tea producing and illustrates it step by step. It obviously that black tea might be produced/manufactured obtained(in the diagram it is obtained one way and processed two ways) through two methods. They consist of traditional and modern methods.


At the beginning, fresh tea leaves are collected according to needed quality of tea. If we need good quality tea, only bud and 2 top leaves are picked. Afterwards, withering process isare being implemented, as the result 60% of moisture goes are going out. Then, depending on the regarding to which method we want to use the process of rolling or cutting occurs. Evidently, after the fast cutting process smaller granular pieces of tea leaves are being created.


On the other hand, by rolling the leaves we are disposing of enzymes and get flat and broken leaves.
Afterwards, by means of the oxidation process leaves change alter (alter = they do it themselves, you could say "The leaves color are altered" but "change" is better because it's passive) their colour to copper in presence of air and enzymes. In the end, the leaves are being dried in hot air dryers and 97% of moisture vaporizing. During this their they spread flavour and aroma are released.


On the whole, the process of getting black tea isn't doesn't complex. Even if process has 4 stages mass-production of tea isn't supposed to be easy. (you shouldn't make inferences or assertions in this type of IELTS writing task) 

 

Overall very good work. Because this is a general process (something that happened in the past, now and in the future) the logical tense is present simple, and there's no reason to use continuous tenes (e.g. "The tea is picked and dried") If a word is written in the diagram you can use it, finding a synonym isn't always helpful because sometimes they have slightly different meanings. Also I usually prefer the word "to leave" instead of "to go out."
