I would say 今日はとてもよい(or いい)てんきでした。
*いい comes from よい and it's "い adjective" so for its past tense, we say よかったです instead of いいでした, it's not correct.
朝ごはんにをオムレツメレットをがつっくりましたす。.バナナも食べしましたす。. ( [-~(し)ました] が 正しいですか? きのうこのそれきじアーティカルを読みましたんでいます。.
I think you've done all the thing, so it's needed to use the past tense. What you wanted to say would be:
I cooked omelet for my breakfast. I ate banana, too. I read this article yesterday.

*しました is the past form of する/します and for 食べる, し isn't needed for the past tense, we say 食べました.
