want means 'desire something' or 'wish for something': I want to stay here, he wants to eat ice cream, etc.  won't is a contraction of 'will not', used to express the future: I won't be here tomorrow, etc.

This is hard to explain without speaking to each other in person since the pronunciations are similar, but I think a good comparison of the English "wa" and "wo" sounds (for the words that you chose) to Japanese sounds is 「うあ」and 「うお」. You'll say the "wa" in "want" in a higher voice than the "wo" in "won't", if that helps you hear the difference.
