What Chinese dynasty is the most admired?
What old Chinese dynasty (or period) do the Chinese hold in the highest regard?
My favorite is the Tang - it was the one of the most innovative and open to outside influences. However, I'm just starting out with Chinese history, so I may be off here.

I come from China and like the unique Chinese history. The Chinese dynasty that I most admired is Spring and Autumn Period and the Warring States Period(春秋战国) which was a colorful age before Chin Dynasty and which is often called the Big Golden Period. Nine tenths of precious thoughts originated from this period such as Confucianism, Taoism, Legalism, Mohism, etc. I am always excited as soon as I think of the scene of Contention of A Hundred Schools of Thought. That was a passionate era in which Chinese people were full of creative thoughts and uncomparable courage. In my view, the most important point that could be used to evaluate any epoch should be the valuable thoughts that this period can bring to its descendants, even all humans. All sorts of thoughts emerged in Spring and Autumn Period and the Warring States Period that made tremendous effects to later China and made Chinese Chinese. Every following dynasty including Han Dynasty, Tang Dynasty and Sung Dynasty cannot jump out of the hedge, although they could also bring to the world huge contributions. The most percious asset for humans is their thoughts which could also be the reason of culture forming, custom, languages, rules and so on in different races. So, the most admired dynasty for me in China is the Spring and Autumn Period and the Warring States Period.

Sung dynasty is the most colorfully flavorful/fruitful--from a literary point of interest.

It depends which Chinese region you are from. If you are from the north, then it is most prbably the Han Dynasty and if you are from the south, it would be T'ang Dynasty.
In terms of objectiveness...
Chin - for it first united the country physically and culturally including the language. What we are writing today is the standard form from the State of Chin. If it had lasted longer, it would be greater than those of the Han.
Han - because it was less ruthless from the previous Chin Dynasty. Many foreign goods came into trade with China. Pineapples, grapes were imported. The power of the dynasty drove the Hsiang Nu to the further west and thereby causing the local babarians to migrate further west causing the demise of the Roman Empire. Chinese people are known as the Hans, the language, known as the language of the Hans.
Sui - Laid the foundation of the T'ang. Built the Grand Canal and commerce between the north and south sky rocketed. Korea were threatened. However within another generation, all squandered by one scion. Too short to be considered great. However, its achievements cannot be cast aside.
T'ang - the 2nd golden age. Southern regions were finally incorporated into the empire. Chinatown is called T'ang Cities, the Cantonese called themselves the people of T'ang. Propserous, open to foreign cultures and women had status. A great economic and military power to reckon with. The Sinkiang region was annexed and became permanent Chinese territory. Poetry, arts and cultural aspects reached its zenith.
Sung. A militarily weak dynasty but the arts flourished. Founded by an unscrupulous person who usurped the throne from a widow and and child. Bullied by barbaric powers and forced to retreat south with the northern half went to foreigners. Retribution, the widow Empress and child committed suicide in their last naval battle with the Mongols. Paper money was invented.
Yuan: Theorectically the largest land empire on the ear
