There is a big difference, I believe:
1. "God save us" is the so-called subjunctive. It is a wish or hope.
a. We are in big trouble. May God save us! Please!
2. "God saveS us" is just a statement of fact.
a. We humans often make plans, but God often saveS us from ourselves. That is, He (She?) does not let us do what we wanted to do.

Luffy:
It all depends upon who is speaking and writing, and why they are using the phrases as follows:
==============================================
"God save us" or "God saves us", and why?

.
.
One can invite God to save some people by writing or saying; "God save us."
or one can make a general statement which informs people that God operates in our lives to accomplish good things, in which case, one might write or say;
"God Saves Us."
