Choosing is less formal than selecting. They both mean to pick from a group of available options.
A "choice" is usually based off of a "preference". Most of the time, people use the word "choice".
"I choose not to eat meat."
"He chose to stay at home instead of going out."
A "selection" is usually more thought out or technical.
"You have been selected for the job."
"I selected the ingredients myself."
