if you're about to leave: 母と買い物してきます。or 母と買い物に行ってきます。
or informal 母と買い物してくる(よ・ね・わ) or 母と買い物に行ってくる(よ・ね・わ)
or if you're shopping right now 今、母と買い物しています。
or informal 今、母と買い物中。
There's many ways to say mother in Japanese, depending on your personality and the person you're talking to.
Usually the simple rule is you call your Mom 母 (はは) and other people's mom's お母さん おかあさん or お母様 おかあさま
