Is this sentence correct?: 'My responsibilities are washing the dishes and cooking the meals.'

Yes it's correct.
Just a tip for you though: if you're using it in a CV or job application, I would say 'my responsibilities include...' because that shows that you're not only limited to these two tasks but are capable of doing other things :)
