To answer your question, "you name it" can come at the end of a list, and means "whatever you can think of". For example, "I can fix any thingamajig: mobile phones, computers, DVD players, touchscreen TVs, you name it." It means the person can fix almost anything.
"Jam" usually means a workshop, in a musical sense. One musician has a short melody, and the other band members play along and offer their own ideas. So they "jam" the tune (or, "They jam."). If you jam a song, you are playing it freely. If you rehearse a song, you are playing it accurately. It's been adopted in a theatrical sense as well.

If you say 'you name it' to a person you're asking them to give you some information or to decide something to what has been talked about.
Example:
A: Do you want to go out to a restaurant?
B: Yes
A: Where'd you want to go?
B: You name the place and I'll meet you there.
Obviously it can be used for lots of examples and 'it' here could replace 'the place'
Jam can refer to dancing although i never use it so i'm not so familiar with using it. Seems a little outdated to me.
