I will...
In Mandarin, how do you say that you will do something (i.e I will eat, I will drink, I will sleep, etc.)?

it depends, in chinese there is no fixed form to express future state
for example:
I will do it in two days,
We will eat the pancake at 11am.
I will sleep at 12 pm today.
BUT I'd like to tell you there is an universal word can be used in most situations——"打算", although sometimes not that appropriately.
I will do it in two days,
We will eat the pancake at 11am.
I will sleep at 12 pm today.
