'waiting time' or 'wait time', which one is correct?

I think you need context. There is a "wait time" at restaurants. AS in, how long a person must wait to be seated. ON the other hand, Its "waiting time"! - Can be used as an adjective to describe an expectation and acceptance of the need or requirement to wait. Out of context these are not stand alone sentences though. Hope it helps!
