what are the different between "fancy"and"want"

In UK English "fancy" is still used, if you want to say "Would you like a drink?", as opposed to "Do you want a drink?". I suppose it's a matter of who you are talking to. I'm in the US, and we don't use the word "fancy" in that context but if you go to London, it will be the polite way to ask someone if they "would care for a drink". To ask "Do you want a drink?" is informal.

Fancy can be used to mean "do you want". ex: "Fancy a drink?" modern speakers usually don't use fancy to express desire. Modern English speakers usually use fancy to refer to how classy or glamorous an object is. ex: "Sue's dress is very fancy, how much did it cost her?" Did that answer your question?
