"Dormire" is a verb ("to sleep"), while "sonno" is a noun ("sleep"); both refer to sleeping, but being different parts of speech, they are used in different kinds of constructions:
dormo = I sleep
faccio un sonno = I'm having a sleep
ho sonno = I am sleepy

I'm very tired=sono stanco,sono stanco morto,sono stanco da morire,sono sfinito,sono esausto,ho un sonno pazzesco,"che sonno che ho!"

dormire is to sleep but sonno is to be sleepy so sonno is used with the verb fare
ex. Ho sonno= I'm sleepy
io dormo= i sleep
addormentare= to fall asleep
