You say "Sorry" when you have offended someone or when you feel badly about something. You say "Pardon" when you are trying to get someone's attention, or in place of "excuse me."

Pardon me:) But you don't necessarily need to have much to do with the French people to use pardon. It may well originate from French, but it is a word which you will find in most English dictionaries. Pardon can also mean "A forgiveness of a crime and the penalty associated with it. It is granted by a sovereign power" (wikipedia) Pardon can also be used to ask someone to repeat what they said. Pardon may come across a bit old fashioned if you speak with young people, forms like "I beg your pardon" is not something you normally hear a 14 year old kid say:D Sorry main purpose is to express regret for something. Sorry can also be used to ask someone to repeat what they just said. example for use of sorry: Whitney- I lost all your money. Bob- Sorry? Whitney- I LOST ALL YOUR MONEY. Bob- Why you....!! Whitney- I'm Sorry!

It is exactly the same meaning , but "Sorry " is in english , and "Pardon" is in french and both are a speech form of apologize ,being sorry , regreting something you have done or so . If you happened to hear the word " Pardon" from a native english speaking person ,that is because maybe he or she lived in france , mingled with french people , there is always an interaction between different cultures , so some english speaking people would use words from french or italian for example .
