Which is correct and common? I'm doing restaurant business. I'm engaged in a restaurant business. I'm in the restaurant business. My book says the first one is completely wrong, and the second one makes sense, but actually, native English speakers wouldn't say that, and they would say the third one. Is that true?

Rachel is right. Also common is "I have a restaurant" or "I run a restaurant"

This is true. More common ways of saying those phrases are"I own a restaurant" and "I work in a restaurant"!
