Can I say 'She is off this week' when she is on holiday for this week?
Can I say 'She is off this week' when she is on holiday for this week?
And can I also say 'she is taking off or she she is taking holiday'?

She is off this week is correct. As for the other sentences they don't sound right. It would be better to say 'she is on holiday' or 'she is taking the week off'.
