“Crunch” is a word used to describe something that happens with a very short deadline, at the last minute, or when there is no other choice. It’s a noun (although it is being used as an adjective in your example), and is often used as part of the phrase, “in a crunch” (e.g., “John isn’t as good a football player as Frank, but we can use him in a crunch”).

I'm guessing it should be "crunch time" talks. Crunch time is slang for things that happen with urgency at the last moment. I've never heard the phrase "crunch talks".
