mmm actually both of them have a quality of being unsure, both are stating opinions, the main difference would be that "creer"(to believe) is a matter of believing, and "pensar"(to think) is a matter of reflexion, so you can use them with that in mind, but the reality is that it is up to you, at least in México not a lot of people think there's difference between them, not at least in the example you put :)

'Creo' has more sureness: Creo que vendrá a las 8:00 'Pienso' or 'supongo' (I suppose) includes more assumption: Pienso que podría venir a las 8:00. Supongo que podría venir a las 8:00

( tal vez si están allí tal vez no ) en el caso de : Pienso que : ( se refiere más a una idea concreta ) por ejemplo / Pienso que estoy enamorado por que lo siento en el corazón .... Hopefully a native will speak up, I'm just learning myself. The way I take it is that Pienso means something like "I feel that blah blah blah" and Creo is more of "I think that blah blah blah."
