We would tend to say "Your work is incomplete", but "Your work is *uncompleted*" can also also be used. (but it must be in the past participle with a *d*).

Never in my life have I ever heard someone say "your work is UNcomplete.
Stick with incomplete
UNcomplete is in the dictionary, but that doesn't mean that it sounds right or is the proper everyday usage. (At least here in the US)
