Is the sentence "I don't know what to begin with" okay?
If I don't know how to begin talking about something, could I say "I don't know what to begin with"? Or should it only be "I don't know how to begin?"

Yes, both are fine.
You could also start with a rhetorical question, for example *Now where shall I begin...* but be cautious because this normally implies that you know a lot about the subject.

as above but most English people say: " I don't know how to begin" or "I don't know how to start."
and they might add: would /could you please give me a hint?
