How to use them?
*Is there any difference between "this includes" and "which includes" here?

This is a very good question. As a native speaker I would say which includes, rather than this or including in the first example.
The world has changed, which includes all kinds* of changes.
or
The world has changed, and this includes all kinds* of changes. (note the plural of kinds as you are saying that there are more than one.)
Similarly, 'Women's human rights, and this includes violence against women" is also appropriate, along with which.
