How do I list things I like to do in Japanese?
For example, how would I say "I like to go hiking, swimming, and camping. "

I like to go hiking, swimming, and camping.
In general I would say: わたしはハイキングをしたり、およいだり、キャンプにいったりするのが すきです。
or わたしはハイキングやすいえいやキャンプがすきです。
If you like only these three things: わたしはハイキングをすることと、およぐことと、キャンプにいくことがすきです。
or わたしはハイキングとすいえいとキャンプがすきです。

「ハイキングしたり水泳したりキャンピングすることが好きです」is another way of saying it.

The easiest way to discuss your interests in Japanese is to list them as your "hobbies."
You can follow this form: 私の趣味は...です [watashi no shumi wa...desu]. Just add と [to] between each item in your list.
You can also use the descriptor 好きです [suki desu] to say the things that you "like" but not necessarily that you "do."
Here are some possible translations of your sentence:
Suki form:
私はハイキングと水泳とキャンプグが好きです. [watashi wa haikingu to suiei to kampingu ga suki desu].
Shumi form
私の趣味はハイキングと水泳とキャンプグです. [watashi no shumi wa haikingu to suiei to kampingu desu].
There are other forms as well, but these are the ones that I have heard the most often.
