Actually, '轮不到' is not a polite but a bit offense. normally, we omitted two existing meanings, one is 'whatever', the other is 'the style of complaint'. people apply it into sentence for complaining 'you have no right to meddle in my business no matter how you are good at it or perform better than me OR who do you think you are to meddle in my business, I don't need your help even if I get in a trouble (a bit jealousy and childlike) 轮不到+ someone= (who do you think you are), therefore, apply to your sentence provided above, ”我的事轮不到你来管“ hope it helps

I think both have the same meaning, when you want to / are doing something, someone just wants to stop you doing it, and then you may say: It's my own business, you don't have to tell me whether its right or wrong, but you might feel so angry when you saying it. As you posted samples above, the only a little bit different is the level of the angry feeling. The first one is lower than the second one.

In everyday speaking, '轮不到' is used to say something is not in someone's jurisdiction to be commented on/acted on/be involved in etc. The phrase itself is quite neutral. Spoken in angry tone, like in "这事轮不到你说话", it is telling someone to shut up. Spoken in an indifferent tone, like in "这事也轮不到我来管", it could be used to shrug off responsibility or walk away from something.
