The noun in "Persian zebra" is "zebra" which is a common noun. "Persian" in that phrase is an adjective. Don't be confused by the capital letter in Persian. In English we use capital letters to start proper nouns, but we also use a capital letter to start adjectives that describe a particular country (French wine, Chinese food etc.). That doesn't make common nouns like "wine" or "food" into proper nouns though.
