If I have to say "I saw that person behind the tree" --> "나는 그 사람을 나무 뒤에(서?) 봤어요" I am a bit confused if I should use 에 or 에서. What I mean is that "그 사람이 나무 뒤에 있다" so should I use "에" because I want to comunicate his existing/standing position? Or should I use 에서 because 에서 is used with 동사 like 보다?

나무 뒤에서=behind the tree

I think
-에 + be verb
-에서 + other verbs 😀
For example,
강아지가 침대 위에 있다.
강아지가 침대 위에서 잠을 잔다.

In the sentence I think the person behind the tree is I -not him, so neither 에 nor 에서. You should change the sentence itself as ->나는 그가 나무 뒤에 있는 것을 보았다. This sentence 나는 그 사람을 나무 뒤에서 보았다 means “I saw him from the back of the tree.”
