I'm guessing as I don't know jazz or the clarinet but... I think 'liquorice stick' is slang for the clarinet, and 'fish hook' possibly for a saxaphone? I'm thinking these relate to the shapes of the instruments. A clarinet is straight and dark (if you ignore the metal), and the saxaphone has a hook shape. Hopefully you'll get an answer from someone in the know.
