I saw a following sentence
Raw egg is used in Caesar salads.
Is this sentence correct? Why doesn't the "raw egg" need article or in plural form?
Does it indicate a type of eggs?

Just as you say, flour is used to make bread. You don't have to say how much flour to use in a general discussion.
