"Which" and "that" can be used interchangeably with things. "That" in this case is used as a subject, so the sentiment must be expressed in two sentences or separated by a semi-colon. I prefer cooler weather, which is why I live in the mountains. = I prefer cooler weather. That is why I live in the mountains. = I prefer cooler weather; that is why I live in the mountains.
