If I ask students to memorize a passage and then they have to write down the passage from memory. If there is a word or an expression to describe it? Recital seems to be the word, but it means to say something loudly from memory, not write down from memory. Thank you for your help.

I'm unaware of the specific term you're after (for writing after you're memorized it). The general term for it though is  'memory exercise'.
