Overseas English would sound a bit different. 1 "I'm picky about *my* coffee", would be more common. 2 "I'm choosy (or choosey) when it comes to shoes", would be more common. 3 I'm having a hard time picturing somebody using this phrase... maybe it would be more natural to say, "I'm not particular about those things". 4 Again, not sure I've ever heard that. Perhaps, "I'm decided about my bangs." or "I'm committed to having (or not having) bangs." 5 "I'm fussy when it comes to using peppers", would be more natural. 6 "I'm fastidious about *my* curtains", you can't really be fastidious about *any* curtains. Sometimes it's hard to explain style in English. It takes a lot of reading and practice.

It's not exactly easy to explain, but they don't sound natural.
