When is the word “bamboo” countable and when is it uncountable?

The word "bamboo" by itself is not countable. E.g. "Pandas eat bamboo."
When we use the word "bamboo" as a modifier for another word, then it becomes countable. For example, "I have 2 bamboo plants."
