The "Kansai zushi" I remember is "Oshi zushi" which came in a rectangle box. They are also called "Hako zushi". The content of the box is two layered, bottom layer being rice and top being fish, and pressed tight together. Also I have had "Maki zushi" which is a fish wrapped in "Konbu", a thick seaweed. I believe the major difference between "Kansai zushi" and "Edomae zushi (the one we call "Sushi") is that the fish in "Kansai zushi" is marinaded/pickled while the fish in "Edomae zushi" is raw. The ones I remember of "Kansai zushi" are also a bit sweeter than usual Sushi. They are both delicious, though.
