I think mitä is used for uncountable nouns and mikä is for countable.
Mitä tuo on? Kahvia. Millaista se on? Hyvää. Tee on kallista.
Mikä tuo on? Sanakirja. Millainen se on? Hyvä. Ravintola on kallis.

The basic rule is that "mikä" is used when the word is the subject of the sentence and "mitä" when it's the object.
Mitä kettu syö? - Kettu syö pieniä eläimiä.
Mikä syö ruohoa? - Lammas syö ruohoa.
Of course, "mitä" is also used for uncountable nouns like eco said.
