What's the difference between "either one" and "one or the other"? Like,
I have to choose either one.
I have to choose one or the other.

Only the second one works. No native would ever say "I have to choose either one." We would only use "either one" if we're thinking of it as an opportunity, not as a requirement:
I can choose either one.
