Both are correct but with slightly different meanings.
'I would love to' indicates genuine pleasure at the thought of helping. 'I would be happy to' does not. This actually means 'willing to' and not literally 'happy to'. So in your first sentence, the speaker really wants to help. In the second, they don't mind helping.
