I've learned this phrase "now that I like" is a casual phrase to mean "now that I like shopping." The word "shopping" is omitted.
Then "He used to hate jogging, but now he enjoys." or "I used to avoid horror movies, but now I watch."
Are these sentences also acceptable in a casual conversation?

The ‘That I like’ construction is used after someone else introduces a subject for the first time, to contrast it with previous views. For example:
A: I hate swimming and going to the gym.
B: Really, well John hates jogging.
A: Now, that I like.

In your sentence, 'that' is just a pronoun for shopping.
- What about shopping?
- Yes, I like that.
They changed the word order for emphasis, and 'that' would be stressed when spoken.
In the other sentences, you also need pronouns.
He used to hate jogging, but now he enjoys IT.
I used to avoid horror movies, but now I watch THEM.

There are several things to address here:
"Now that I like" has a couple of possible meanings.
It can just mean "I like that." In this case the word THAT is usually emphasized.
It can also be a sort of qualifying phrase: "Now that I like exercise, I go to the gym all the time."
Your other sentences need an additional pronoun:
"He used to hate jogging, but now he enjoys IT." or "I used to avoid horror movies, but now I watch THEM."
