Could you tell me wich one is correct and why please?

The first is correct: All I see now are donkeys. Because there is more than one donkey we use are. Are should be used for plural nouns (more than one). Is should be used for singular nouns (only one of something).
Ex: All I see now are donkeys.
All I see now is a donkey.
