depends on what you mean by paper.
if you mean document etcetera then its papers
if you just mean paper (on which we write or draw) its paper.

This depends on the context. If you just mean something to write on, "paper" is uncountable. But "paper" can also mean things that are countable: newspapers, essays for school, and other kinds of documents.
So, for example:
1. (in class)
A: I forgot my notebook. Do you have any paper I can borrow?
B: Yes, I have plenty of PAPER.
2. (at a newsstand)
A: Do you have any newspapers?
B: Yes, I have plenty of PAPERS.
3. (in university)
A: Do you have to write a lot of essays this week?
B: Yes, I have plenty of PAPERS.

Maria, paper is singular because it is uncountable. You ask for a piece of paper or some paper.

hi,
paper like money is a non - count name if you just mean sth to write on. ;) so u may say :
- Give me a piece of paper. Or,
- i need a small sheet of paper to write on.
But remember if you are talking about an article which is called a paper/papers you are using a countable noun. look at the sentence below:
- I have written many papers written in optimality perspective. ;) Some of these papers are ISI ones. ;)
