When a person say "I'm doing great".what does he mean?
After Christmas party,I asked my foreign teacher:"Are you tried?" and he said:"I'm doing great!" Is that mean "I'm great"?

I assume you mean you asked him if he was "tired"not "tried".
When he said he is doing great he means he is not tired and he feels well. He is happy and feeling good. He has no problems or at least none that are affecting his mood at the time.
Sometimes we also say that as a polite response to a greeting.
Person 1: How are you today?
Person 2: I'm doing great. How about you?
