Do not write nor too short nor too long essays.
I know it's not a good way of expressing the idea.
Please.a better way of saying it.

"Write essays that are neither too short nor too long"

"Do not write essays that are too long or too short." is the most natural way of saying it in American English. You don't need to use "neither ... nor" in this case. :)
