'to find it intersting' is there such a phrase in english, 'to find it interesting', for e.g. 'they find this bike pretty cool'?

Totally. You can use the "find N adj" structure to mean "think (that) N be adj". They find this bike pretty cool. = They think (that) this bike is pretty cool. I found it difficult. = I thought (that) it was difficult. We found the beds very comfortable. = We thought (that) the beds were very comfortable.
