What's the difference between "to do" and "doing"?
Here are two examples below:
Having lost all his money, Mark had no choice but to ask the police for help. Why using "to ask", not "asking"
They postponed giving a definite answer. Why "giving", not "to give".

You are confused because in the 2nd sentence "giving" is not a verb, it is a verbal noun( gerund)
and the entire last half of the sentence is actually the object.
ex:
They posponed the game.
the game is the object
A verbal noun is the act of doing something, not the action itself
ex :
After (the act of ) reading the newspaper I went for a walk.
I like reading.
Reading imroves your mind.

Hello Ervin,
Very often the form of the second verb depends on the first verb. So in the second sentence 'postpone' is always followed by the -ing form of any verbs following.
The first one is a pattern 'to have no choice but to + verb infinitive'.
