Basically there is no difference. They both are difference ways of saying the other one.
example: I kind of left the book at home.
I sort of left that book on the bus.

Firstly, it is 'difference', not 'deference' - that is an entirely different word with a different meaning.
Kind of and sort of are usually interchangeable. What sort of/kind of meat is in this dish?
